Making the bhajji mixture
Add the gram flour, rice flour, red chilli powder, turmeric powder, cumin powder, garam masala, chaat masala, ajwain seeds, asafoetida, baking soda, and salt to a large mixing bowl. Whisk the powders. Add the corn kernels and, using your hands, squeeze and mash about half the corn to release moisture. Add the chopped bell peppers, onions, green chillies, ginger, garlic, curry leaves, and coriander leaves. Mix thoroughly. The mixture should be thick and clumpy, holding together when pressed. Add water only if needed (1-2 tablespoons), as the vegetables will release moisture.
