National Nutrition Week is observed annually from 1 to 7 September to raise awareness of the importance of nutrition and encourage healthier eating habits. This year, we bring you a pongal recipe that is light on the stomach and high in fibre. Kodo millet pongal, also known as varagu pongal, is a wholesome and nutritious dish seasoned with aromatic spices. It is popular in South Indian homes and renowned for its mild and savoury flavour. It is typically prepared in a pressure cooker but can also be made in an Instant Pot for ease. The tempering over the cooked millet and dal adds a rich flavour. It can be enjoyed either as a breakfast or as a satisfying snack.
