Preparing the ingredients
Start by taking the mango pickle pieces and getting rid of any excess oil, to prevent the sandwich from becoming soggy. Finely chop about ¼ cup of pickles for the filling. For the spiced pickle spread, mince 2 tablespoons of pickle very finely until it's almost a paste. Chop the coriander leaves. Shred the cheddar cheese if using a block, or prepare cheese slices. Set all ingredients within reach.

Making the spiced pickle spread
Combine the mayonnaise with the finely minced mango pickle in a small bowl. Add the chaat masala and red chilli powder. Stir everything until well combined. The spread should be creamy with small pickle bits. Taste and adjust the spice as needed.

Assembling the sandwiches
Lay out four bread slices on a clean surface. Spread the spiced pickle mayo mixture on each slice. On two of the slices, layer half the shredded cheese. Place the chopped mango pickle pieces evenly over the cheese, then sprinkle with fresh coriander. Layer the remaining cheese on top. Top with the remaining bread slices (mayo side down) and press down gently.

Grilling the sandwiches
Heat a large skillet over medium-low heat. Butter the outside of each sandwich generously - about 1½ teaspoons per side. Place sandwiches in the heated pan. Cook for 3-4 minutes until the bottom is golden brown and crispy. Check by lifting one corner. Flip carefully using a spatula and cook the other side for another 3-4 minutes. Press down with the spatula to help the cheese melt and bind with the pickle.
