Ariselu is a beloved festive sweet, especially in Andhra Pradesh and Telangana, often made for Sankranti and Diwali. This golden-brown delicacy is prepared using freshly ground rice flour mixed with jaggery syrup, flattened into discs, sprinkled with sesame seeds, and deep-fried. The result is a crisp yet soft sweet with a nutty aroma that stays fresh for weeks.

Description - Step 1
Step 1: Soak and dry rice
Pick, wash, and soak the rice overnight. Drain the water in the morning and spread the rice on a clean cloth to dry. The grains should be slightly damp and not completely dry.

Step 2: Make rice flour
Once semi-dry, grind the rice into a fine flour using a blender. The slight moisture in the rice will help the flour bind better when mixed with jaggery syrup.

Step 3: Prepare jaggery syrup
In a thick-bottomed pan, add one cup of water to the grated jaggery and heat on a low flame. Stir continuously until it thickens into a syrup. To check the consistency, drop a little syrup into cold water. If it forms a lump and doesn’t dissolve, it’s ready.

Step 4: Mix rice flour with syrup
Slowly add the rice flour into the jaggery syrup while stirring to avoid lumps. Mix well until it forms a thick dough-like mixture. Let it cool slightly before shaping.

Grease your hands with oil and roll the mixture into big lime-sized balls. Place each ball on a banana leaf or plastic sheet, gently pat it into a thin round disc, and sprinkle sesame seeds on top.

Heat oil in a thick-bottomed wok on medium-low flame. Fry each disc one at a time until golden brown on both sides. Remove carefully and drain excess oil on tissue paper.
