Masala pav is a favourite street food from Mumbai, India, that many people adore. It’s made with soft bread rolls, called pav, which are toasted in butter and filled with a deliciously spicy onion-tomato masala. Think of it as a quicker, easier version of pav bhaji. It is that irresistible snack you'll find yourself craving over and over again.

½ tspCumin seeds
2 mediumOnions, finely chopped
2Green chillies, finely chopped (adjust to spice level)
3 mediumTomatoes, finely chopped
1 tbspGinger-garlic paste
1 tspRed chilli powder
¼ tspTurmeric powder
1 tspCoriander powder
2 tspPav bhaji masala
to tasteSalt
2 tbspFresh coriander leaves
6Pav buns (For the Pav)
2 tbspButter (for toasting)

Description - Step 1

Step 1: Prepare the masala filling

  • Begin by heating oil and butter together in a pan. Once it’s hot, toss in the cumin seeds and let them sizzle.

  • Next, sauté the onions and green chilies until they’re golden brown, which should take about 5 minutes.

  • Then, add in the ginger-garlic paste and let it cook for a minute.

  • Add the tomatoes and cook them until they’re soft and mushy, for around 5 to 6 minutes.

  • Stir in all the spices and blend everything together.

  • Finally, toss in some fresh coriander leaves and turn off the heat.
