French toast recipe can smell like fall weather and pumpkin spice too! The eggy favourite gets a makeover with caramel apple topping, which is absolutely perfect for breakfast or a filling meal when you would want something special, simple and yet filling. Slices of bread are dipped in a cream-and-egg mixture, golden fried, and stacked under tender, caramelised apples in a buttery, spiced caramel. It's a sweet breakfast or brunch that feels special without needing much focus on technique, and it makes a cosy bit of autumn food for a slow weekend morning. French toast has always been a clever use of leftovers. It was developed to use up stale bread, which is why the French call it pain perdu, or ‘lost bread’, and versions of it turn up all over the world. The eggs are whisked with cream, the bread is dipped, and it is fried at once in a buttered pan. The apple caramel is the star, and most of a stick of butter is melted in a heavy skillet, then diced apples, brown sugar and apple pie spice go in and cook for 8 to 10 minutes, stirring now and then, until the sugar has dissolved and the apples turn a deep caramelised brown. Cream goes in next, and the mixture is brought to a boil, immediately reduced to a simmer and cooked for 3 to 4 minutes, until the liquid thickens into a thin, creamy caramel. Apples that hold their shape work best, so firm varieties such as Fuji, Gala, Red Delicious, or Royal Delicious are good choices. Apple pie spice is mostly cinnamon, nutmeg, and allspice, sometimes with cloves, which you can find on some e-commerce sites. For the toast itself, thick slices of brioche are ideal. The cream can be swapped for whole milk or light cream with similar results.
