Diwali 2026 is the perfect occasion to spotlight what has been trending, and this gajar halwa fudge is one of them. It’s not one of those Diwali sweets that takes a beloved sweet, which in this case is the gajar ka halwa and gives it a proper form that can be picked up and eaten like a barfi or laddoo. Kids and adults will love it, and if you are already making this sweet, make it in excess so you can split it between the gajar halwa recipe and the fudge recipe. What makes this Diwali mithai unique is its form as well as taste, as the gajar ka halwa’s flavour is cherished during North Indian winters and also elsewhere, where ghee is used generously for its body-warming properties, so people can withstand the biting cold of the plains. The sweet dish almost always uses the season’s best carrots, which come into season from September onwards. So stock up on the carrots, grate them, and make this delicious treat. Like the usual gajar halwa recipe, this one too uses a generous amount of ghee, condensed milk, khoya, and plenty of sugar. The trick is getting the fudge consistency right for it to be cohesive enough to hold shape and not fall apart like a halwa. The moisture from the carrots needs to be cooked out; this is combined with the additional moisture introduced by ingredients like ghee, sugar and condensed milk, and the rest follows the format of a fudge recipe: cooling, setting and cutting the mithai brick into pieces.
