The darbesh recipe consists of besan and rice flour pearls, which are soaked in sugar syrup with additions of khoya, cashew nuts, raisins, cardamom and nutmeg. It resembles a boondi laddu but tastes extra delicious with a softer texture due to the milk content in khoya. Red and yellow coloured boondi contribute to the distinct speckled appearance of each laddu. Also referred to as Dorbesh, it is a popular sweet item in mithai stores and homes in Bengal.
It is one of those Kali Puja recipes which many people prepare during Diwali. The darbesh sweet recipe becomes easy as long as the process of frying boondis goes well. They need to be fried till done, not until crisp, so that they soak up the syrup properly. Laddus can be stored in an airtight container for two days.
