Baked fish with lemon-garlic marinade is a light and healthy dish with a citrusy and garlicky flavour. This is a Mediterranean-inspired recipe where the fish is marinated in a buttery lemon-garlic mixture and baked.

700 gmWhite fish fillets (rawas, pomfret, or basa)
to taste Salt
to taste Black pepper
1 largeLemon (thinly sliced)
For the lemon-garlic marinade:
4 tbsp Butter
6-8 Garlic cloves (minced)
2 tbsp Lemon juice
1 tsp Lemon zest
1 tsp Dried oregano or kasuri methi
1 tsp Cumin powder
2 tbsp Vegetable oil
to taste Salt
as neededFresh coriander (for garnish)

Description - Step 1

Prepare the fish

Preheat your oven to 220°C. Line a baking dish with aluminium foil or grease it well with oil. Pat the fish fillets completely dry using paper towels - this is important for proper browning. Season both sides of the fish generously with salt and black pepper. Arrange the lemon slices in a single layer at the bottom of the baking dish, then place the fish fillets on top of the lemon slices.

Make the lemon-garlic marinade

Melt the butter or ghee over low heat in a small pan. Add the minced garlic and cook for about 1 minute until fragrant but not browned - be careful not to burn the garlic as it will taste bitter. Remove the pan from the heat and stir in the lemon juice, lemon zest, oregano or kasuri methi, cumin powder, and vegetable oil. Mix everything well until combined. Taste and add salt as needed.

Marinate and bake the fish

Pour the warm lemon-garlic marinade evenly over the fish fillets, making sure to coat them well. Use a spoon or brush to spread the marinade if needed. Place a few extra lemon slices on top of the fish for presentation and extra flavour. Transfer the baking dish to the preheated oven and bake for 12-15 minutes. The exact time will depend on the thickness of your fillets - thin fillets may only need 10 minutes, while thicker pieces might need up to 18 minutes.

Garnish and serve

Remove the baking dish from the oven carefully. Transfer the fish to serving plates, spooning some of the pan juices over the top. Garnish with freshly chopped coriander leaves. Serve immediately while hot.
