These beetroot-stuffed veg momos combine the softness of traditional momo dough with a nutritious, colourful stuffing. The beetroot adds sweetness and a lovely pinkish hue, while the mix of veggies and paneer ensures a protein-rich filling. Steamed rather than fried, they make a light yet satisfying snack.

Ingredients

For the Momo dough (plain):
2 cupsAll-purpose flour
¾ - 1 cupWarm water (for kneading)
½ tspSalt
1 tspOil or ghee
For the beetroot-vegetable-paneer stuffing:
1-2 tspOil
1 tspGreen chillies (finely chopped)
1 tspGinger (finely chopped)
½ cupOnion (finely chopped)
½ cupGreen bell pepper (finely chopped)
1 cupPaneer (grated or crumbled)
1 medium-sizedBeetroot (boiled, grated or finely chopped)
to tasteSalt
¾ - 1 tspWhite pepper powder (or black pepper)
1 tspDried herbs (parsley and oregano, optional)

Description - Step 1

Cook beetroot and prepare stuffing (optional)

Peel, chop and boil or steam the beetroot until soft – then grate or finely chop it. Heat oil in a pan over medium heat. Sauté the green chillies and ginger for 30 seconds until fragrant. Add the finely chopped onions and cook until translucent, around 2-3 minutes. Then add the chopped bell pepper and sauté another 2 minutes. Add the grated or cooked beetroot and mix well. Turn off the heat. Let it cool a bit. Once slightly cooled, add grated or crumbled paneer, salt, pepper (and herbs). Mix thoroughly. Taste and adjust seasoning. Set aside.
