Description - Step 1

Step 1: Prepare the dough

Mix whole wheat flour and salt in a bowl. Gradually add water and knead into a soft, smooth dough. Add a teaspoon of oil and knead again for 2 minutes to make it pliable. Cover with a damp cloth and let it rest for 15 minutes while preparing the stuffing.

Step 2: Cook the stuffing

Heat 1 tbsp of oil in a pan. Add cumin seeds and let them crackle. Sauté onion, ginger, and green chillies until softened. Add grated cauliflower and cook on medium heat until the raw smell goes away and the water evaporates. Season with red chilli powder, coriander powder, garam masala, salt, and coriander leaves. Cool completely before stuffing.

Step 3: Roll and fill

Divide the dough into equal portions. Roll one ball into a small disc. Place 2-3 tbsp of stuffing in the centre and bring the edges together. Pinch to seal tightly, then gently roll into a thick paratha using a rolling pin. Sprinkle dry flour as needed to avoid sticking.

Step 4: Cook the paratha

Heat a tawa or skillet. Place the rolled paratha on it and cook until brown spots appear. Flip and spread ghee or oil on both sides. Cook until crisp and golden. Repeat with the remaining dough and stuffing.
