Living up to its name, ‘Rangoli paratha’ is a sight to behold and is delicious too. This recipe takes the typical stuffed paratha and shapes it into flowers with vegetable-filled petals. The paratha is then baked with the exterior becoming flaky and crispy. The paratha is made with Aashirvaad Shudh Chakki Atta, which is prepared from selected whole-wheat grains sourced directly from farmers. It is also ground using modern chakki technology with 0% maida and 100% whole wheat. This recipe is one of the winning entries of the Aashirvaad Paratha Contest, from week 8, created by Suman Agarwal. This paratha offers a fun way to eat vegetables and makes it an excellent, nutrient-dense lunchbox option for kids.

The warmth of cardamom powder and cumin, along with the fresh flavours from coriander and green chillies, ensures the kebabs are fragrant and well-seasoned – all within the boundaries of vrat cuisine. A one-hour freeze before frying firms the mixture of this seekh kebab too well. These vrat-friendly seekh kebabs are ideal for Navratri, Ekadashi, Mahashivratri, or any fasting day when you want something special on the table. They pair well with a refreshing mint-coriander chutney made with sendha namak, or a simple yoghurt dip. Make a larger batch and freeze the uncooked kebabs; they go from freezer to pan in minutes, making them one of the most practical fasting dishes you can prepare.

Description - Step 1

Making the dough

Take a bowl for the dough, and add the whole wheat flour, salt, butter or oil. Gradually add water to knead into a smooth, soft, and pliable dough. Cover and rest for 15-20 minutes.

Making the filling

In a separate bowl, mix all finely chopped vegetables, corn kernels, spices (garam masala, chaat masala, ginger-garlic paste, and chillies), and salt.

Making the stuffing-filled parathas

Divide the dough into four equal-sized balls. Roll a dough ball into a thin, large circle (about 6-7 inches). Place a portion of the stuffing in the centre. Using a knife, make 8 shallow cuts from the edge toward the centre, without cutting through the centre filling (this creates the petals). Gently lift each ‘petal’ and fold it over slightly to expose the filling. Stuff the vegetable mixture into each petal, flatten slightly, and arrange them around a central dough circle, pressing the edges together before baking.

Baking the rangoli parathas

Preheat the oven to 200°C. Place the shaped parathas on a baking tray lined with parchment paper. Brush the top of each petal with melted butter or olive oil. Bake for 12-15 minutes or until the edges are golden brown and crispy. Tip: If you don’t want to bake, cook on a hot, greased tava on low to medium heat, pressing down with a spatula until golden brown.

Top each stuffed petal with a ketchup dot. Place a tomato flower in the centre. Garnish with microgreens and serve hot.
