  • In a pan, heat 2 tablespoons of mustard oil and toss in the garlic cloves along with green chillies. Sauté until the garlic turns golden.

  • Next, add in the coriander leaves and sauté for about a minute.

  • Turn off the heat and transfer the sautéed veggies to a bowl.

  • Once the veggies cool, add amchur powder and salt.

  • Drizzle a little bit of the leftover oil on top and mash the ingredients well using your fingers or a pestle.

  • Your tangy and spicy khatai chokha is ready to be served with rice or any type of flatbreads.
