Black garlic and shiitake fried rice is an umami-rich dish that combines the earthy, unique texture of shiitake mushrooms with the sweet, mellow flavour of fermented black garlic. This recipe is quick and simple, making it perfect for weeknight lunches or busy dinner days.

Ingredients

2 cupsBasmati or long-grain rice (For the rice)
3-4 cupsWater
3-4Black garlic cloves (finely chopped or mashed)
1 cupShiitake mushrooms (sliced)
1 tbspSesame oil
½ cupBrown onion (finely chopped)
3Garlic cloves (finely chopped)
2 cupsMixed vegetables (carrots, bell peppers, green beans)
2Eggs (optional, skip for vegan version)
1 tbspSoy sauce
1 tspGreen chilli sauce
1 tbspTomato ketchup or sauce
to tasteSalt and pepper
for garnishSpring onions (chopped)

Description - Step 1

Step 1: Prepare vegetables and ingredients

If using leftover rice, bring it to room temperature. Slice mushrooms and chop vegetables. Mince black garlic and garlic cloves. Measure the sauces and keep aside.

Step 2: Cook the rice (if not using leftovers)

Rinse rice until the water runs clear. Boil rice in 3-4 cups of water until cooked but firm. Drain excess water and set aside.

Step 3: Cook the eggs (optional)

Whisk eggs with a pinch of salt and pepper. Heat a wok with a little oil, pour in the eggs, and scramble until cooked. Then remove and set aside.

Step 4: Stir-fry vegetables and mushrooms

Pour sesame oil into a wok and heat on a high flame. Add chopped onions, garlic, and black garlic. Sauté for 2-3 minutes. Add sliced mushrooms and mixed vegetables. Stir-fry for 3-4 minutes until vegetables are tender but crisp.

Step 5: Combine rice and sauces

Add cooked rice to the wok. Pour in soy sauce, green chilli sauce, and tomato sauce. Mix everything thoroughly, stir-frying for 2-3 minutes. Add scrambled eggs back in (if using). Adjust salt and pepper to taste. Garnish with chopped spring onions.
