Description - Step 1

Step 1: Slice Brinjals

Wash the brinjals well. Cut half of them into thick round slices and the rest into thick half-moon slices. Keep the thickness even so that all pieces cook at the same time. Place the slices in a bowl.

Step 2: Season with Spices

Sprinkle salt, turmeric, and red chilli powder on the brinjal slices. Add a little lemon juice for sharpness. Mix well so the spices coat every slice evenly. Leave aside for a few minutes to let the flavours adsorb.

Step 3: Prepare Poppy Seed Mix

Lightly grind poppy seeds into a coarse powder. Mix this with a pinch of salt and red chilli powder. This dry mixture adds a nutty crunch to the brinjal coating and enhances the texture when fried.

Step 4: Shallow Fry Brinjals

Heat oil in a non-stick pan. Add brinjal slices in small batches. Fry them on a medium flame, turning sides until both sides turn golden brown. Avoid overcrowding the pan to keep them crisp. Drain on absorbent paper.

Arrange the fried bean bhaja on a plate. Sprinkle with the poppy seed mix for extra crunch. Serve immediately while hot and crisp, as they tend to soften if left standing.
