Prepare the Chilli Garlic Paste
Put the garlic cloves in a large bowl and add a drizzle of oil or water. Mash the garlic with a fork till it becomes a fine paste. Add the chilli flakes and soy sauce, and mix well.
Make Chilli Garlic Oil
In a small saucepan, heat oil till it is about 110•C. Pour the hot oil over the chilli garlic mix, and stir quickly.
Add the Noodles
Add the boiled noodles to the garlic mix and toss properly. Add the vegan oyster sauce. Garnish with chopped scallions and serve.
