1 tbspCornflour slurry (cornflour + water)
2 tbspSpring onion greens (chopped) For Garnish

Step 1: Prepare The Vegetable Mixture

In a large bowl, combine grated cabbage, carrot, capsicum, spring onion whites, ginger-garlic paste, salt, and black pepper. Add all-purpose flour and cornflour. Mix well to form a binding mixture. Do not add water; moisture from vegetables is sufficient.

Step 2: Shape And Fry The Balls

Heat oil in a deep pan over medium heat. Shape the mixture into small balls and carefully drop them into hot oil. Fry until golden brown and crisp. Remove and drain on kitchen paper. Set aside.

Step 3: Prepare The Sauce Base

Heat oil in a wok or pan. Add chopped garlic, ginger, green chillies, and spring onion whites. Sauté on medium heat until fragrant, taking care not to burn the garlic.

Step 4: Build The Sauce

Add soy sauce, red chilli sauce, tomato ketchup, vinegar, and black pepper. Mix well. Pour in water and bring the sauce to a gentle boil. Add the cornflour slurry and stir continuously until the sauce thickens and turns glossy.

Step 5: Toss The Manchurian

Add the fried vegetable balls to the sauce. Toss gently until all balls are evenly coated. Cook for another minute so the flavours come together.

Step 6: Finish And Rest

Turn off the heat and sprinkle chopped spring onion greens on top. Let the Manchurian rest briefly before serving to allow the sauce to settle.
