Chocolate Payasam is a festive twist on Kerala’s traditional Onam dessert. Creamy milk and sweet jaggery form the base, enhanced with cocoa and rich dark chocolate. Roasted cashews, raisins, and cardamom add aroma and texture, making it a delightful treat for the Onam feast, perfect for serving in traditional urulis.
Wash the rice thoroughly and soak it in water for 20 minutes. Drain it well before cooking. Soaking helps soften the rice and ensures an even, creamy texture in the payasam.

Step 2: Roast Nuts & Raisins
Heat ghee in a heavy-bottomed pan and dry roast cashews and raisins until golden brown. Remove and keep aside. This enhances their aroma and adds crunch to the payasam.

In the same pan, fry the drained rice in ghee for 2–3 minutes until lightly scented. This step brings out the nutty flavour of the rice and prevents it from turning mushy.

Add the milk to the fried rice and cook on low heat. Stir occasionally to prevent the milk from sticking or boiling over. Cook until the rice is soft and slightly thickened.

Step 5: Prepare Jaggery Syrup
Dissolve jaggery in a small amount of warm water and strain to remove impurities. Add this syrup to the milk-rice mixture and cook for a few more minutes to blend the sweetness evenly.

Mix cocoa powder with a small amount of warm milk to prevent lumps. Stir it into the rice mixture, then add the chopped dark chocolate. Stir continuously until the chocolate melts completely and the payasam is smooth.
