Egg fried rice is a classic comfort food that combines fluffy rice, savoury scrambled eggs, crunchy vegetables, and umami-rich seasonings. It's easy to make, filling, and incredibly adaptable; you can make restaurant-quality fried rice in less than 30 minutes using leftover rice or freshly cooked grains. It's perfect for a lazy dinner, a quick lunch, a quick tiffin for kids, or as a side dish to your favourite dish.

Step 1: Prep the Ingredients
Wash and finely chop all vegetables.
Crack eggs into a bowl and lightly beat them with a pinch of salt.
Keep your cooked rice ready. Use cold rice to avoid mushiness.

Step 2: Scramble the Eggs
Heat 1 tablespoon of oil in a large wok or pan over medium-high heat.
Pour in the beaten eggs and scramble gently until they’re cooked.
Remove the scrambled eggs from the pan and set aside.

Step 3: Sauté the Vegetables
In the same pan, go ahead and add another tablespoon of oil.
Toss in some garlic and green chilli, and sauté them for about 10 to 15 seconds until they start to smell amazing.
Next, add in the chopped onion and sauté until it turns translucent.
Now, toss in the carrot, beans, capsicum, and the white part of the spring onions. Stir-fry everything on high heat for 2 to 3 minutes until they're just tender but still have a nice crunch.

Step 4: Combine Rice and Seasonings
Add the cooked rice to the pan. Mix gently to combine with the vegetables.
Pour in soy sauce, vinegar, chilli sauce (if using), black pepper, and salt.
Mix everything well to coat evenly with the sauces.

Add the scrambled eggs back into the pan.
Mix and stir-fry everything for around 1–2 minutes to blend the flavours.
Check seasoning and adjust salt or spice as per your taste preference.
