Apple Kheer is a wonderful variation of the traditional Indian kheer, making it an excellent choice for Gudi Padwa celebrations. The sweet apples combine beautifully with creamy milk, fragrant cardamom, and nutty almonds. It’s light, comforting, and surprisingly easy to prepare. With just a few common ingredients, you can whip up a festive dessert that feels indulgent and special. Serve it chilled, garnished with chopped nuts, for a refreshing and delicious end to your festive meal.
Take a heavy bottomed pan and add the milk. Bring it to a gentle boil on medium flame. Once it starts boiling, reduce the flame and let it simmer for about 10 minutes. Stir occasionally so the milk does not stick to the bottom.

Step 2: Add Almond Flour and Raisins
Add almond flour to the simmering milk and mix well. Keep stirring to avoid lumps. Add the golden raisins and allow the milk to slowly thicken and absorb the nutty flavour.

In another pan, add a few drops of desi ghee (if using). Add the grated apples and sauté for 2–3 minutes. This step helps remove excess moisture and brings out the apple’s natural sweetness. You can also cook the apples without ghee if you prefer.

Once the milk thickens slightly, add the sautéed apples and sugar. Mix well and cook for another 5 minutes on low flame. Finally, add cardamom powder or cinnamon powder and give it a gentle stir.

Turn off the flame and let the kheer cool completely. Transfer it to a serving bowl and refrigerate for at least 1–2 hours before serving for the best taste. Serve chilled topped with finely chopped almonds and cashews.
