In a bowl, mix yoghurt, red chilli powder, turmeric, cumin, garam masala, lemon juice, and salt. Add paneer cubes and coat well. Let it rest for at least 30 minutes to absorb all the spices.

Heat oil in a non-stick pan. Cook the marinated paneer until each cube turns golden and slightly charred. This smoky touch gives the sushi its signature Indian aroma.

Place a bamboo mat on a clean surface and lay a nori sheet on top, shiny side down. Keep a bowl of water handy to dip your fingers before handling rice.
