Pazham pori, also referred to as ethakka appam, is a favourite tea-time snack from Kerala that many people adore. It’s made by taking ripe nendran bananas, coating them in a light flour batter, and deep-frying them until they’re perfectly golden. The result is a delightful mix of a crunchy exterior and a tender, sweet interior. Enjoying pazham pori with a hot cup of chai is truly a comforting experience that evokes a sense of nostalgia.

Description - Step 1

Step 1: Slice the bananas

First, peel the ripe nendran bananas, then slice them into thin strips lengthwise and keep aside.

Step 2: Prepare the batter

  • In a mixing bowl, toss together the all-purpose flour (maida), rice flour, turmeric powder, cardamom powder, sugar, and salt. Stir well to combine.

  • Slowly add water until you achieve a smooth, medium-thick batter that nicely coats the back of a spoon.

Step 3: Heat the oil

Pour some oil into a deep pan and warm it up over medium heat until it’s hot enough for frying.

Step 4: Fry the bananas

  • Take each banana slice and dip it into the batter, making sure it’s well-coated. 

  • Carefully slide them into the hot oil and fry until they turn golden and crispy on both sides.

Step 5: Drain & serve

  • Use a slotted spoon to lift them out and place them on a plate lined with a blotting paper; it will soak up any extra oil. 

  • Serve them hot and enjoy with a hot cup of tea.
