Cardamom rose macarons are a gorgeous fusion of French charm and aromatic goodness. These lovely cookies feature a crunchy almond shell that reveals a soft, chewy interior, generously filled with a velvety white chocolate ganache, lightly infused with cardamom. They’re perfect for tea parties, weddings, or as a sweet gift. With each bite, you'll experience a beautiful harmony of spices and floral notes on your palate.

Ingredients

For the shells:
65 gAlmond slivers (blanched & finely ground)
100 gIcing sugar
30 gCaster sugar (superfine)
52 gEgg whites
¼ tspFreshly ground cardamom
¾ tspRosewater
a few dropsRed food colour (adjust to desired colour)
Filling: White chocolate ganache
100 gWhite chocolate (finely chopped)
100 mlDouble cream (heavy cream)
1/8 tspCardamom powder
1 tspRosewater

Description - Step 1

Step 1: Prepare the Almond Mixture

  • Sift the ground almonds and icing sugar together to form a fine powder.

  • Mix in the cardamom and set aside.

Step 2: Make the Meringue

  • Whisk the egg whites until foamy.

  • Slowly add caster sugar and whip until stiff, glossy peaks form.

  • Stir in rosewater and a few drops of food colouring.

Step 3: Macaronage

  • Gently fold the almond mixture into the meringue using a spatula.

  • Mix until the batter flows like thick lava and drops in ribbons.

Step 4: Pipe the Shells

  • Transfer batter into a piping bag and pipe small rounds onto a lined baking tray.

  • Gently tap the tray a few times to remove any air bubbles trapped in the batter.

  • Rest shells at room temperature until a skin forms. This may take up to 3 hours, depending on the weather and humidity.

Step 5: Bake the Shells

  • Preheat the oven to 150°C (300°F).

  • Bake for 12–15 minutes until set and dry.

  • Let it cool before removing from the tray.

Step 6: Make the filling

  • Take a heavy-bottomed pan and heat the cream until just simmering.

  • As soon as you see little bubbles popping up around the sides, switch off the heat. 

  • Toss in the chopped white chocolate and mix it all together until it’s perfectly smooth.

  • Mix in cardamom and rosewater and pop in the fridge to chill.

Step 7: Assemble

  • Pipe ganache onto one shell and sandwich with another.

  • Let your macarons chill in the fridge overnight to really enhance their flavour.
