This tricolour kebab, made with three different kinds of kebabs that symbolize the saffron, white, and green of our national flag, is a colourful and delectable celebration of India's culture. This meal is ideal for serving on Independence Day to bring a tri-shade delight to your table, as it features unique flavours, colours, and textures.

Ingredients

For Saffron Paneer Tikka (Orange)
Paneer (cubed )

Hung curd
2 tbsp
Kashmiri red chilli powder
1 tsp
Saffron strands (soaked in 1 tbsp warm milk)

For Hara Bhara Kebab (Green)
Spinach leaves, blanched & chopped
1 cup
Green peas, boiled
1/2 cups
Boiled potato
1 small
Green chilli

Chopped coriander
1 tbsp
Chaat masala
1/2 tsp
Salt to taste
Bread crumbs
2 tbsp
Oil for shallow frying
For Malai Paneer Kebab (White)
Paneer, crumbled
200 g
Fresh cream
2 tbsp
Grated cheese
1 tbsp
Cornflour
1 tbsp
Green chilli, finely chopped

Cardamom powder
1/2 tsp
Salt to taste
Oil or ghee for brushing

Directions

Make saffron paneer tikka

  • Mix curd, saffron milk, spices, and oil in a bowl.

  • Add paneer cubes and coat well.

  • Marinate for 30 minutes.

  • Grill or pan-fry until golden on the edges.

Make malai paneer kebab

  • In a bowl, mix crumbled paneer, fresh cream, cheese, cornflour, chilli, and cardamom.

  • Shape into small discs.

  • Grill or shallow-fry till lightly golden.
