Prepare the Dough
In a large mixing bowl, combine ragi flour, gram flour, ginger paste, garlic
paste, chili powder, and salt. Mix well with a spoon. Add oil and enough water
to knead a soft, smooth dough that's not sticky.
Shape the Chakli
Before you begin, preheat the microwave oven. Grease the baking tray with oil.
Load the dough into the chakli/murukku maker and press out roundels onto
the tray. Ensure each piece is separate, without overloading.
Bake the Chakli
Place the tray in the preheated oven and bake at 360°F for 15-20 minutes.
Check for doneness, then remove the tray. Transfer the murukkus to a plate
and allow them to cool down.
