Green Moong Kadhi is a comforting version of a classic type of kadhi made with yoghurt. The whole green moong provides a nice, nutty texture, and the creamy layer of yoghurt and besan gives the dish its richness. Different spices, ginger, green chillies, and curry leaves finish it with warmth and fragrance.
The beans are soaked beforehand to make them soft enough to cook in a short time. Before boiling the mixture of yoghurt and besan with water, the two must be beaten together thoroughly to create a smooth mixture that won’t curdle easily. The cooked green moong is then added to the kadhi to soak up some of the tangy gravy.
This recipe makes a wholesome option for everyday meals and can be enjoyed with steamed rice, jeera rice, or simple roti. The dish is enriched with a tempering involving mustard seeds, cumin, fenugreek seeds, dried red chillies, and curry leaves.
