Transform your leftover chicken biryani into golden, crispy fritters with this easy recipe. A perfect tea-time snack that’s crunchy, flavourful, and zero waste.

Ingredients

2 cupsLeftover chicken biryani (cold or room temperature)
½ cupGram flour (besan)
2 tbspRice flour (for extra crispiness)
1 small Onion (finely chopped)
1-2Green chillies (finely chopped, optional)
2 tbspCoriander leaves (chopped)
1 tspGinger-garlic paste
½ tspGaram masala
as needed Salt (biryani already contains salt)
2–3 tbspWater (only if mixture feels too dry)
for deepOil (shallow frying)

Description - Step 1

Step 1: Prepare the Mixture

Take the leftover chicken biryani in a large mixing bowl. Use a spoon or your hands to break down large chunks of rice or chicken. Add chopped onion, chillies, coriander, ginger-garlic paste, gram flour, rice flour, garam masala, and a pinch of salt. Mix well until it forms a sticky, slightly thick mixture. Add a few spoons of water only if the mix feels dry,  it should hold shape when pressed into a ball.

Step 2: Shape the Fritters

Scoop small portions of the mixture and roll them into bite-sized balls or slightly flattened discs. Arrange them on a plate and let them rest for 5 minutes, this helps the flours bind and gives a crispier texture during frying.

Step 3: Fry Until Golden and Crisp

Heat oil in a deep pan over medium flame. To test readiness, drop a small portion of the mixture, it should sizzle immediately. Fry fritters in small batches for 4–5 minutes per batch, turning occasionally until they turn golden brown and crisp. Drain on absorbent paper to remove excess oil.

Step 4: Serve Hot and Crunchy

Let the fritters cool slightly before serving. They should be crunchy on the outside and soft with bursts of biryani flavour inside.
