Step 1: Prep the Shrimp
Use paper towels to pat the shrimp dry, and then sprinkle with a little salt and pepper. This brings out their inherent flavour and makes them sear more uniformly.

Step 2: Sauté Garlic
Put a big skillet over medium heat and melt 2 tbsp butter. Toss in the red pepper flakes and chopped garlic cloves and sauté until fragrant, but not browned.

Step 3: Cook Shrimp
Lay the prawns in a single layer in the skillet. Fry for one to two minutes on each side, or until they turn pink. Be careful not to overcook them.

Add the last tablespoon of butter and stir in the lemon juice and zest. Coat the prawns with the flavourful sauce by tossing everything together. Take it off the stove and garnish with some lemon slices.
