Tikho khichdo is a comforting one-pot dish, traditionally prepared during Makar Sankranti, also called Uttrayan, a popular kite flying festival in Gujarat. Made with wheat, lentils, and a mix of spices, it’s hearty, flavoursome, and perfect for sharing with family and guests. This festive recipe is easy to put together and fills the winter season with warmth, making it a perfect choice for your Sankranti festivities.
Take the peeled wheat and rinse thoroughly under running water. Soak it in enough water for 8 hours or overnight. This softens the wheat and reduces cooking time. Drain the water before cooking.

Cook the wheat
Boil 7 cups of water in a pressure cooker. Add the drained wheat. Cover and cook on high flame until two whistles. Then, lower the flame and slow cook for 25–30 minutes. Once cooked, strain the wheat and rinse with cold water to cool.

Cook lentils and peas
In a separate cooker, boil split pigeon peas, split chickpeas, and 1 cup peas in water with salt. Once the water starts to boil, cover it with a lid and cook until 2 whistles.

Combine wheat and lentils
Open the cooker that has the cooked lentils and add the cooled wheat in it. Mix well, set your stove to low-medium flame and let it cook together.

Prepare the tadka
Heat oil in a pan. Roast the cashews and set aside.
Now, add dry red chilli and mustard seeds. Once they splutter, add asafoetida. Stir in carom seeds, coarsely ground green chilies, garlic, and ginger. Fry them for about 2 minutes. Add chopped green garlic and ¼ tsp salt. Keep stirring for 2 minutes. Mix in turmeric, red chilli powder, ground cloves, black pepper, and cinnamon. Give it a good mix and then switch off the flame.

Mix in tadka and dry fruits
Add roasted cashews, raisins, and the prepared tempering into the wheat-lentil mixture. Mix thoroughly and cook on low flame, stirring often to avoid sticking to the bottom.

Final touches
Add chopped coriander and adjust salt to taste. Place the cooker on a griddle to prevent sticking and let it simmer for another 10–12 minutes. Keep stirring occasionally to prevent burning.
