Take a sieve and wash the sabudana properly. Next, transfer the sabudana to a large pot and add equal amounts of water. Cover and let it soak for 4-5 hours or overnight. All the water should be soaked up.

Cook the Potatoes
Take a deep fry pan and heat it on high flame. Then, add the ghee, cumin seeds, green chili, curry leaves, salt, and potatoes. Cook well.

Cook the Sabudana
Add the crushed peanuts to the mixture. Then. Add the soaked sabudana, sugar, and lemon juice. Mix well and keep cooking till the sabudana becomes translucent.

Sprinkle some freshly chopped coriander on top of the Sabudana Khichdi. Stir and serve.
