2 cupsThick yoghurt (hung overnight)
1 cupMango pulp (fresh or canned)
3 tbsp Powdered sugar
½ tsp Cardamom powder
a fewSaffron strands (soaked in 1 tbsp warm milk)
For assembling the parfait:
1 cupGranola
1Ripe mango (diced)
2 tbsp, choppedMixed nuts (almonds/pistachios)
for drizzlingHoney or maple Syrup

Description - Step 1

Prepare the shrikhand

In a bowl, whisk hung yoghurt until smooth and creamy. Then fold in the mango pulp, powdered sugar, cardamom powder, and saffron milk. Mix well until silky and uniform in texture. Chill for at least 30 minutes before layering.
