Try Ghewar, a traditional sweet dish originally from Rajasthan, and made with flour and ghee.

Ingredients

Sugar (For Sugar Syrup)
1 cup
Water
1/2 cup
Ghee (For Ghevar)
4 spoons
Milk
1/2 cups
All-purpose flour
1 cup/150-175g
Gram flour
1 tbsp
Lemon juice
1 spoon
Dry fruits
Saffron

Directions

Make the Batter

Take a bowl and add the ghee and ice cubes. Churn these together. Add some milk, and churn again. Slowly add some all-purpose flour, and churn it constantly, adding chilled water to the mixture. You will get a loose batter. Take this batter in a steel bowl, and place this steel bowl in a bowl filled with ice cold water.

Fry the Ghewar

Take a kadhai and add the refined oil or ghee. Once this has become hot, add the ghewar batter, as shown in the video. After pouring the first few rounds of the batter, make a hole in the centre of the ghewar. 

Make the Sugar Syrup

Take a pan and add the sugar and water. When the sugar has melted completely, add cardamom and rose water. Cook till it reaches a stringlike consistency. Keep the fried ghewar on a strainer and add the sugar syrup on top. Garnish with nuts and rabdiRandi, and serve!
