Paal Kesari is a South Indian dessert that is perfect for festivals like Navratri 2026. While traditional South Indian Rava Kesari uses water, this recipe employs milk to cook the semolina. This results in a texture that is incredibly rich, creamy, and melt-in-the-mouth: smooth and luxurious, much like premium North Indian milk-based halwas.
It can be distributed to guests visiting your home after showing them the Golu display, offered as Naivedya to Goddess Durga during the nine days of Navratri, or simply served for breakfast. This Kesari recipe is quite easy to prepare, even for beginners. You simply need to be careful when adding the rava (semolina) to ensure no lumps form. Once that step is handled correctly, the rest of the process is easy.
The method is quite similar to that of regular Rava Kesari, but the use of milk gives it a completely different flavour. It is soft, has a mild milky taste, and does not feel too heavy.
