Pao bhaji is an Indian street food where spiced vegetable mash (bhaji) is served with buttered and toasted buns (pao). It’s a savoury delight, designed to sustain. Pao bhaji sliders elevate this street-style snack to munch-worthy perfection, perfect for get-togethers, easy serving, and quicker prep. Instead of serving bhaji and pao separately, the mash is layered inside the pao, along with chopped onions. The result? A slider where you can’t just stop at one!

Description - Step 1
Prepare the vegetables
Rinse and boil the potatoes before chopping them into small, even cubes. While the potatoes boil, rinse and chop all the other vegetables and keep them handy for cooking. Tip: Boil the cauliflower and peas for 2-4 minutes to speed up cooking later.

Cook the bhaji base
In a large pan or kadai, add ghee. As the ghee warms, add the cumin seeds. Once they begin to sizzle, add the onions and cook for 7-8 minutes, or till they turn slightly translucent. Next, add the ginger-garlic paste and sautè for another minute or two, till the raw smell goes away.

Add the spices
Add the tomatoes and cook till they become mushy. Next, add all the spices, salt, and green chilies (if using). Regularly stir the mixture to ensure the spices don’t burn. The onion-tomato base should turn slightly dark in colour.

Add the vegetables
Add all the vegetables and mix well. Next, add 1 cup of water and stir. Once the mixture starts bubbling, cover the pan and reduce the heat to medium. Let it simmer for about 15 minutes, till the water evaporates and the mixture thickens. Remove the lid and, with a masher (or spatula), mash the mixture till it turns semi-solid and easy to spread, with no large vegetable chunks. Squeeze the lemon juice, remove from heat, and let it cool.

Toast the buns
Generously spread the butter on the inside of the buns and toast them on the tawa. Once they turn slightly crisp, set them aside.

Assemble the sliders
Scoop a tablespoon of bhaji onto each slider and lightly spread. Now, add chopped onions and coriander. Cover the buns and serve with lemon wedges on the side.
