Ensure that the Greek yoghurt is at room temperature. Shell the pistachios if you don’t like their skin. Have silicone muffin cups or small moulds ready on a tray that fits in your freezer.

Step 2: Blend the yoghurt mixture
Add pistachios, Greek yoghurt, and sweetener (honey, maple syrup, or your preferred sweetener) to a blender or food processor. Start with 1 tablespoon of sweetener and adjust after tasting. Blend until completely smooth and creamy with a beautiful pale green colour. Taste and add more sweetener if needed.

Step 3: Fill the moulds
Pour the frozen pistachio yoghurt mixture into silicone muffin cups or small moulds, filling each about ¾ full to allow for slight expansion. Tap the tray gently on the counter to remove any air bubbles and ensure smooth tops.

Place the tray in the freezer. Freeze for 3-4 hours or until completely firm. For best results, freeze overnight. The cups should be solid enough to pop out of the moulds easily.

If adding a chocolate coating, melt the chocolate in a microwave or double boiler until smooth. Remove frozen yoghurt cups from moulds by gently pushing from the bottom. Dip each cup halfway into melted chocolate, allowing excess to drip off. Immediately sprinkle with chopped pistachios before the chocolate sets.

If you added a chocolate coating, return the cups to the freezer on a parchment-lined tray for 30 minutes to set the chocolate completely. Store in an airtight container with parchment paper between layers.
