Description - Step 1

Make the Dough

Combine the maida, salt, and ghee or oil in a bowl. Mix until the mixture feels crumbly. To create a smooth dough, add water slowly. Cover and let it rest for 20 minutes.

Prepare Onion Filling

Start by heating 2 tablespoons of oil in a pan. Add fennel, cumin, nigella, and mustard seeds. After a brief sauté, add the finely chopped onions and green chillies. Let the onions soften in the pan. After 2 minutes, stir in the besan. Add masalas like cumin, turmeric, chopped coriander, amchur, garam masala, salt, and powdered chillies. Mix well. Toss everything together and cook until it is completely dry. Let it cool.

Shape the Kachoris

Roll the dough into small balls. Press down on each ball to flatten it, then top with a dollop of onion filling and seal by gathering the edges. Gently pat each filled kachori into a thick disc.

Fry and Serve

In a deep skillet, heat some oil over medium-low heat. Fry the kachoris in small batches, stirring every so often, until they are crisp and golden. Remove and drain the excess oil on kitchen paper. Top with mint chutney or sweet tamarind chutney and serve hot.
