This Republic Day, add a festive flair to a classic dessert with this tricolour cake recipe. It incorporates the colours of the Indian flag, i.e., saffron, green, white, and blue, into a vanilla cake. It is not just beautiful to look at but also makes for a delicious treat—one meant to be enjoyed with family and friends. Let’s get baking.
Grease 3 round cake tins (6-7-inch) and keep aside. Also, preheat the oven to 170 degrees C. Sift the flour, baking powder, and salt together into a bowl and set aside.

Make the batter
Add butter cubes and sugar to a bowl. Now beat the two together into a pale, fluffy mix. Then add eggs one by one and whisk well. Now, add vanilla extract and mix. Then, add flour mixture and milk alternately in 2–3 batches. Mix gently (do not overbeat). Stir in vegetable oil at the end.

Colour the batter
Divide the batter into 3 equal bowls. Add orange food colour to bowl 1, green food colour to bowl 2, and leave the third bowl plain (white layer of the flag).

Bake the cake
Pour each coloured batter into separate pans and tap them to release bubbles. Bake the cakes for 25–30 mins or until a toothpick inserted into the centre comes out clean. Let the cakes cool completely on a rack.

Make the frosting
Add whipping cream and sugar to a bowl. Beat till stiff peaks are formed. Add in vanilla extract and let the mixture chill for 5 minutes. Once it’s chilled, transfer a tablespoon of frosting to a separate bowl. Add a drop of blue food colouring and mix well.

Assemble the cake
Place the green layer at the bottom. Lightly frost on top. Then add the white layer on top. Again, frost light. Lastly, add the orange layer on top. Now, crumb coat the cake by spreading a very thin layer of frosting all over it. This layer traps all the loose crumbs so they don’t mix into the final frosting. Refrigerate the cake for 20–30 minutes to set this layer.

Final frosting and decorating
Once the crumb coat is firm, take the cake out and apply a thicker, smooth layer of frosting on top and around the sides. Using the coloured frosting, pipe a circle with 24 spokes, like the Ashok Chakra, at the centre of the cake.
