Description - Step 1

Step 1: Soak sabudana

  • Rinse the sabudana well to get rid of excess starch.

  • Soak 1 cup of sabudana in water–just enough to immerse them.

  • Depending on the kind of sabudana used, soak for 4 to 6 hours or overnight if required.

Description - Step 2

Step 2: Prepare the base

Heat ghee in a pan, then add cumin seeds, ginger, and green chillies. Sauté them until they release a delicious aroma.

Step 3: Add potatoes

Toss in some boiled potato cubes and give them a good stir.

Step 4: Cook sabudana

Mix in the soaked sabudana, sprinkle with rock salt, and cook over medium heat until the pearls become translucent.

Step 5: Make it creamy

  • Gradually pour in the milk while stirring, and then fold in some fresh cream to achieve that risotto-like creaminess.

  • Toss in roasted peanuts, squeeze some lemon juice, and top it off with fresh coriander. 

  • Serve it hot.
