Description - Step 1
Step 1: Boil and Mash the Potatoes
Peel the potatoes and chop them into 2.5 cm cubes. Boil in salted water until very tender, about 12-15 minutes. Drain thoroughly, then mash the potatoes until smooth. Let cool slightly.

Step 2: Make the Gnocchi Dough
Add the potato starch and 1/2 tsp salt to the mashed potatoes. Gradually pour in the water, mixing and kneading until a firm, smooth dough forms. If the dough feels too sticky, add a bit more potato starch.

Step 3: Shape the Gnocchi
Divide the dough into 4 portions. On a potato starch-dusted surface, roll each portion into a 2 cm thick rope. Cut the ropes into 2.5 cm long pieces to form the gnocchi shapes.

Step 4: Boil the Gnocchi
Bring a large pot of water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 3 minutes. Remove with a slotted spoon and transfer to a colander. Drizzle with a bit of oil to prevent sticking.

Step 5: Prepare the Chilli Garlic Oil
In a bowl, mix together the minced garlic, sliced green onion, gochugaru, red chilli flakes, sugar, soy sauce, and black vinegar. Heat the vegetable oil in a pan until quite hot. Pour the hot oil over the spicy garlic mixture. It should sizzle, and the spices should bloom in the oil.

Place the boiled gnocchi in a large bowl. Pour the chilli garlic oil over top and gently toss to coat evenly. Transfer to serving plates. Garnish with toasted sesame seeds, chopped coriander, and grated Parmesan if desired. Serve immediately while hot. Enjoy your spicy potato gnocchi!
