Kanda Poha is a traditional Maharashtrian breakfast made with flattened rice, onions, potatoes, and a handful of spices. Quick to prepare and light on the stomach, it’s perfect for busy mornings. The balance of onions, chillies, curry leaves, and a final squeeze of lemon makes this dish refreshing and nutritious.

Description - Step 1

Step 1: Wash the Poha

Place the poha in a sieve and wash gently under running water. Drain well and let it rest for 5 minutes. The grains should be moist but not mushy. This step ensures the poha stays fluffy when cooked.

Description - Step 2

Step 2: Prepare the Tempering

Heat oil in a non-stick pan. Add mustard seeds and cumin seeds. Once they splutter, add a pinch of asafoetida and curry leaves. This tempering gives the poha its authentic flavour base.

Step 3: Cook the Onions and Potatoes

Add chopped onions to the pan and sauté until they turn translucent. Sprinkle in salt and sugar to balance the flavours. Stir in the green chillies, then add boiled and cubed potatoes. Toss lightly so the potatoes soak up the spices.

Step 4: Add Spices and Poha

Mix in turmeric powder and cook for a minute. Add the soaked poha to the pan. Stir gently to coat the flakes without breaking them. Cook for 2–3 minutes until everything is well combined and heated through.

Step 5: Finish with Lemon and Coriander

Turn off the heat. Squeeze half a lemon over the poha and add chopped coriander. Mix well. Serve immediately while warm for the best flavour.
