Made with sweet potato mash and spices like ginger and cinnamon, this cake is a perfect addition to the dinner table. You can opt for a buttermilk frosting or serve it as is, with hot tea.
Preheat the oven to 180°C. Grease a 9-inch round cake pan with butter and flour the sides. Also, line the bottom with a baking parchment and butter the top of those too.

Take a large bowl and add all the dry ingredients. Mix them and set aside.

In another bowl, add butter and sugar, and whisk them together until they turn into a creamy mixture. Scrape the sides. Then, gradually add the beaten eggs, vanilla extract, and sweet potatoes. Whisk it all until it turns smooth. Make sure to scrape the bowl.

Step 4: Add the buttermilk and dry ingredients
Add the dry ingredient mix to the bowl of wet ingredients in two batches, stirring gently after each addition. Pour in the buttermilk and whisk just until the batter is smooth and evenly combined. Avoid overmixing. Stop as soon as you no longer see streaks of flour.

Pour the batter into the prepared tin and bake for 45 minutes, or until a toothpick inserted in the centre comes out clean. Once baked, let the cake cool in the pan. Then cook it on a rack before serving with a hot drink of your choice.
