Khapli wheat Tikhat Puri is a crispy, spicy Indian puri made with whole wheat flour, green chillies, cumin, coriander, and spicy flavourings. The dough needs to be somewhat stiff to hold its shape when rolling and frying, while the spices are mixed in for flavour. The recipe has a rustic flavour profile, which is a combination of nutty wheat taste along with heat from the chilli and red chilli powder. Khapli wheat provides these puris with a deeper wheat flavour and a more textured bite as compared to puris using refined flour. Aashirvaad Chakki Khapli Atta can be used as the flour in the recipe, and a little oil can be used in the dough in order to make sure the puris stay crispy after frying.
