Step 1: Prepare the vegetable stuffing
Heat 2 tablespoons of oil in a non-stick wok. Add onions, spring onions, carrots, capsicum, cabbage, and a pinch of salt. Toss everything together on a high flame to retain the crunch of the vegetables.

Step 2: Add sauces and sprouts
Stir in white pepper powder and soy sauce. Add the bean sprouts and chopped spring onion greens. Mix well and cook for a couple of minutes until the vegetables slightly soften but still stay crunchy. Remove from the heat and let the stuffing cool.

Step 3: Prepare the wrappers
Make a smooth paste of cornflour with 2 tablespoons of water. Lay the spring roll wrappers on a clean surface and keep them covered with a damp cloth to avoid drying.

Divide the cooled stuffing into 10 equal portions. Place one portion on one side of the wrapper, fold in the edges, and roll tightly. Seal the edge with the cornflour paste. Keep the prepared rolls under a damp cloth until frying.

Heat sufficient oil in a wok. Gently slide in the spring rolls and fry on medium heat until golden and crispy. Drain them on absorbent paper. Cut into halves if desired and serve hot with dipping sauce.
