Well, this viral, high-protein, mini pancake recipe does all three — looks amazing, tastes even better, and boosts your protein intake. Made with just four core ingredients, these mini pancakes only need 15 minutes and pantry staples to deliver brilliantly delicious results.
To start with, separate the egg whites from the yolk. Also, take a ripe banana and mash it smooth in a bowl. Lastly, measure out all remaining ingredients and have them ready to use.

Make the batter
In a bowl, add the egg whites and lightly whisk until frothy (not fully stiff, just bubbly). In the bowl of mashed banana, mix in the yoghurt, baking powder, and vanilla extract (if using). Now, gently fold egg whites into this batter. Important: do not over-mix.

Make the pancakes
Heat a non-stick pan on low–medium heat. Lightly grease it with oil. Now, drop tiny spoonfuls to make mini pancakes. Cook each pancake for 1–2 minutes per side until golden and set. The batter can be cooked in two batches in 8-10 minutes. Serve hot with honey or maple syrup.
