The Indian flag inspired this colourful tricolour hummus dip. Delicious and nutritious, this recipe has classic hummus with spinach and roasted red peppers.
Make a smooth mixture by blending the chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Divide the mixture into three equal parts.

Make Saffron Layer
Add paprika and roasted red bell pepper to one portion. Blend until it achieves a creamy texture and an orange colour.

Make White Layer
Make the second layer with a hummus base, extra tahini, and some yoghurt. Only adjust salt and lemon juice as required.

Make Green Layer
Toss in blanched spinach, coriander, and green chilli for the third portion. Blend until a velvety texture and green colour take over.

Assemble & Chill
Spread green hummus on the bottom of a flat plate or glass bowl, then white hummus in the centre, and finally saffron on top. Use a spatula or the back of a spoon to layer them neatly. Keep the dip in the fridge for 10 minutes and enjoy it chilled.
