Prepare the Batter

In the blender, let's combine the matcha powder, flour, baking powder, maple syrup, eggs, vanilla extract, spinach, and milk. Give it a whirl until you achieve a smooth, vibrant mixture.

Cook the Pancakes

In a large non-stick pan, melt a small knob of butter over medium heat. Once the pan is heated, start cooking the pancakes by pouring approximately 2 tablespoons of batter for each pancake. Allow them to cook for 2-3 minutes until golden brown, then gently flip them over and cook for another minute on the other side.
