Croquettes are breaded rolls, usually fried and filled with meat, wheat, and vegetables. Creamy, mashed potatoes are usually used to bind the filling or as the filling itself, while breadcrumbs are used to coat the roll and give it that trademark crunchy exterior. In this recipe, mashed potatoes, cooked with butter, cheese and herbs, are coated in breadcrumbs and air-fried to be served as an appetiser or evening snack.

Description - Step 1

Boil the potatoes

Scrub potatoes clean and poke holes all over with a fork. Place them in the cooker with 1–1½ cups of water. Pressure cook on medium heat for 3–4 whistles. Let the pressure release naturally before opening. Potatoes should be fork-tender. While the potatoes boil, prep other ingredients (onions, butter, cheese, etc.)
