Potatoes are one of the most common Navratri vrat foods, but usually enjoyed as a savoury main. This aloo halwa recipe turns the beloved ingredient into a unique and high-energy dessert, perfect for Navratri. While vegetable-based halwas, like carrot halwa or lauki halwa, are fairly common, aloo remains a novel ingredient. But it’s well worth a try, indeed! Aloo halwa is an easy recipe to master. Begin by roasting and sauteeing mashed potatoes in ghee. This is important for a rich, caramelised taste. Add sugar and milk, and continuously stir the mix till it thickens. Stir in aromatic and chunky garnishes for a rich texture. And that’s how you make aloo halwa for Navratri. It’s an easy recipe to follow, but while cooking, make sure not to skimp on the ghee as it enhances the texture and flavour. Also, ensure the potatoes are boiled well and mashed properly to avoid lumps. Also, prep time varies depending on whether the potatoes are pre-boiled. If using pre-boiled potatoes, this recipe comes together in 30 minutes. Since potatoes are rich in carbs and starch, the aloo halwa recipe remains popular during Navratri or as a fasting food, since they provide excessive energy to the body. Thus, when you’re fasting and consuming fewer meals or limiting the ingredients you’re consuming, aloo halwa can be a rich energy source.

FAQs

Keep stirring the halwa, especially after adding the sugar and water, or else it will start charring and sticking to the bottom. Also, while roasting, the potatoes can take about 10 minutes to change colour, turn golden, and give out a nice aroma. Don’t rush the process.
