Suji halwa is a timeless Indian dessert that everyone, from kids to adults, absolutely loves. This delightful dessert is made with roasted semolina and ghee, sweetened with jaggery, and has a wonderfully soft, melt-in-your-mouth texture. It’s quick to whip up, nutritious, and can be enhanced with a variety of nuts. This dessert can be enjoyed as a breakfast, a snack, or as a special treat.
Heat 1 teaspoon of ghee and add the chopped cashews and almonds. Roast till they turn light golden and aromatic. Remove and set aside.

Roast the semolina
In the same pan, add the rest of the ghee and semolina (suji) to the pan. Roast the semolina on medium flame till it releases a nice aroma and becomes slightly brown.

Prepare liquid
While the semolina is roasting, add water and jaggery powder to another pan. Simmer this mixture for about 7 to 10 minutes. Both semolina and jaggery water need to be hot when combining.

Mix and cook
Gently pour the hot jaggery liquid into the roasted semolina. Stir continuously to avoid forming lumps. Cover with a lid and cook the halwa till it slightly thickens and the semolina is cooked through. If you feel it is not cooked, then add hot water as required and cook for a few more minutes.

Flavour and garnish
Add the crushed cardamom and roasted nuts. Mix it well and enjoy the halwa when it is warm.
