Aloo kanda poha is a classic Maharashtrian breakfast dish crafted from flattened rice (poha or pohe), potatoes, onions, mild spices, and fresh coriander. Description - Step 1

Prep the poha

  • Rinse the flattened rice in a colander under running water till the water runs clean. 
  • Keep it aside after rinsing.

Description - Step 2

Fry the peanuts

  • In a pan, heat some oil and fry the peanuts until they become fragrant and crunchy. Keep them aside.

Description - Step 3

Fry the potatoes

  • Fry the diced potatoes till they turn golden. Once done, keep it aside.

Temper spices and sauté onions

  • In the same pan, add mustard, cumin, a pinch of hing, chilli, ginger, curry leaves, and let them splutter.
  • Next, add the onions and sauté till the onions give a golden hue.
  • Now, add turmeric, salt, and sugar and sauté till all these spices become aromatic.

Add peanuts, potatoes, and poha

  • Add in the fried peanuts and potatoes, mixing them thoroughly. 
  • Then, gently stir in the poha and combine everything. 
  • Cover the pot and let it simmer for about 4 to 5 minutes, or until the poha is cooked through.

Finishing

  • Don’t forget to squeeze half a lemon and toss in some fresh coriander leaves, mixing it all carefully.
